Butter

Butter is such a versatile ingredient and though it comes and goes out of fashion, I have always preferred it to other spreads simply on the basis that there are only a few ingredients in it and has less capacity to surprise you with a suddenly lethal ingredient. Unless, of course, you add lashings of butter to everything, in which case it could be lethal, but hardly a surprise.

I do have a specific soapbox that I stand on in relation to butter. A friend once said to me “Isn’t all butter the same?” I gasped in horror and proceeded to lecture her for possibly too long for our friendship to handle how that was absolutely not the case. Luckily, she forgave me and we’re still friends. She also buys the good butter!
