Raspberry Jam

This is the bees knees of raspberry jam. It’s everything you want – an addictively good fresh raspberry flavour, not too sweet and retaining that particular raspberry tang that makes your tastebuds waltz with delight. Texture wise, it slides off a spoon easily, which I prefer to the jelly-like consistency of commercial jams.

The jam is divine on toast or anything else with a horizonal surface you can smear it on. My preference is dark rye bread and if I’m being extra gourmet, a good smear of mascarpone. I also used a small spoonful in the base of the pasty cases when I made these individual raspberry and vanilla mascarpone tarts. Recipe here. The jam added a more intense raspberry flavour which I think improved the recipe.

Or you can throw yourself on the mercy of Richard and beg, as I did, for him to send you some in the mail. You’ll have to buy in bulk, but believe me when I say that it gets eater faster than you would imagine possible. Don’t leave your stash unattended!
